  • 1 cup plain Greek yogurt
  • 1/4 cup fresh lemon juice
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. In a medium bowl, whisk together the Greek yogurt, lemon juice, olive oil, minced garlic, oregano, thyme, salt, pepper, and red pepper flakes to create the Greek chicken marinade.
  2. Place the chicken thighs or breasts in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are fully coated.
  3. Seal the bag or cover the dish and refrigerate for at least 2 hours, or up to 8 hours, to tenderize the chicken.
  4. Preheat your grill to medium heat (about 375°F) or preheat your oven to 400°F (200°C).
  5. If grilling, remove chicken from the marinade, letting excess drip off. Grill for 6-8 minutes per side, until internal temperature reaches 165°F (74°C).
  6. If baking, place chicken on a parchment-lined baking sheet. Bake for 20-25 minutes, or until internal temperature reaches 165°F (74°C).
  7. Let the Greek chicken rest for 5 minutes before slicing and serving.
