  • 1/2 cup ketchup or BBQ sauce (for meatloaf mix)
  • 4 cups prepared mashed potatoes (creamy style)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked, crumbled bacon (optional, for topping)
  • 2 tablespoons fresh chives, chopped (for garnish)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, milk, onion, salt, pepper, and garlic powder. Mix gently with your hands until just combined; do not overmix.
  3. Press the meat mixture evenly into the bottom of the prepared baking dish. Spread the ketchup or BBQ sauce over the meat layer.
  4. Spread the prepared mashed potatoes evenly over the meat mixture.
  5. Sprinkle the shredded cheddar cheese over the mashed potatoes. If using, scatter the crumbled bacon on top of the cheese layer.
  6. Bake for 35 to 40 minutes, or until the meat is cooked through and the cheese is melted and lightly golden brown.
