3 1/2 cups sweetened shredded coconut, divided
1 teaspoon vanilla extract
12 ounces semi-sweet chocolate chips
1 tablespoon coconut oil (optional, for dipping)
Instructions
In a medium bowl, combine the sweetened condensed milk, vanilla extract, and 3 cups of the shredded coconut. Mix well until everything is evenly moistened and combined.
Scoop the mixture and roll it into balls, about 1 inch in diameter. You should get about 20 to 24 balls. Place the formed balls on a baking sheet lined with parchment paper.
Place the remaining 1/2 cup of shredded coconut on a separate small plate.
Chill the coconut balls in the refrigerator for at least 30 minutes to firm them up. This step helps them hold their shape during dipping.
Prepare the chocolate coating. Place the chocolate chips and coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted.
Remove the chilled coconut balls from the refrigerator. Dip each ball into the melted chocolate, allowing excess chocolate to drip off.
Immediately roll the chocolate-coated ball in the reserved shredded coconut, or place it directly onto the parchment-lined sheet to set.
Return the finished chocolate coconut balls to the refrigerator until the chocolate coating is firm, about 15 to 20 minutes.
Notes
For a firmer center, you can freeze the rolled balls for 15 minutes before dipping them in chocolate.
If you prefer a plain coconut ball without chocolate, simply skip steps 5 through 7. These are still delicious as creamy coconut treats.
