Make this classic American comfort food for a hearty weeknight dinner. This recipe features juicy ground beef patties smothered in a rich, savory mushroom and onion gravy.

  • 1.5 lbs ground beef (80/20 recommended)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg, lightly beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil, for searing
  • 1 large yellow onion, thinly sliced
  • 8 oz cremini mushrooms, sliced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard

Instructions

  1. In a medium bowl, combine the ground beef, breadcrumbs, milk, egg, salt, pepper, garlic powder, and Worcestershire sauce. Mix gently with your hands until just combined; do not overmix.
  2. Form the mixture into 6 oval-shaped patties, about 3/4 inch thick.
  3. Heat the olive oil in a large skillet over medium-high heat. Sear the patties for 3 to 4 minutes per side until nicely browned. Remove the patties from the skillet and set them aside on a plate.
  4. Reduce the heat to medium. Add the sliced onions and mushrooms to the same skillet. Cook, stirring occasionally, until the vegetables are soft and browned, about 6 to 8 minutes.
  5. Push the vegetables to one side of the pan. Add the butter to the empty side and let it melt. Sprinkle the flour over the melted butter and cook, stirring constantly, for 1 minute to create a roux.
  6. Slowly whisk in the beef broth until the mixture is smooth. Add the dried thyme, soy sauce, and Dijon mustard. Bring the gravy to a simmer, stirring until it thickens slightly.
  7. Return the browned patties to the skillet, nestling them into the gravy. Reduce the heat to low, cover the skillet, and let the steaks simmer for 10 to 15 minutes, or until they are cooked through and tender.
  8. Serve immediately over mashed potatoes or rice, spooning plenty of the rich mushroom gravy over the top.

Notes

  • For extra flavor in the patties, substitute half of the breadcrumbs with crushed saltine crackers.
  • If you prefer a thicker gravy, let it simmer uncovered for a few extra minutes before returning the steaks.
  • This recipe works well for slow cooker preparation; brown the patties first, then place them in the slow cooker with the gravy ingredients and cook on low for 4 to 6 hours.
