Make these elegant roasted stuffed dates filled with creamy goat cheese and topped with walnuts. This recipe delivers a perfect sweet and savory bite, ideal for holiday gatherings or as a simple, impressive party appetizer.

Ingredients

  • 12 Medjool dates
  • 4 ounces soft goat cheese, room temperature
  • 1/4 cup chopped walnuts, toasted
  • 1 teaspoon olive oil
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking sheet.
  2. Slice each date lengthwise down one side, opening it like a book, but do not cut all the way through. Remove the pit from each date.
  3. Gently stuff each date cavity with about one teaspoon of soft goat cheese.
  4. Place the stuffed dates on the prepared baking sheet. Drizzle lightly with olive oil and sprinkle with a pinch of salt.
  5. Bake for 8 to 10 minutes, or until the dates are slightly softened and the cheese is warm.
  6. Remove from the oven. Immediately top each warm date with a sprinkle of toasted chopped walnuts.
  7. Serve warm as an easy party appetizer or elegant snack.

Notes

  • For a different flavor, substitute cream cheese or Boursin for the goat cheese.
  • If you want a bacon wrapped dates recipe variation, wrap half the dates in half strips of bacon before roasting.
  • These are excellent as gluten free party food.
