Make this comforting French Onion Pasta in one pot. It features deeply caramelized onions, a rich, creamy sauce, and melted Gruyère cheese for a satisfying weeknight dinner.

  • 1 tablespoon olive oil
  • 2 large yellow onions, thinly sliced
  • 1 teaspoon salt, divided
  • 1/2 teaspoon sugar
  • 1/4 cup dry white wine or beef broth (optional)
  • 4 cups beef broth
  • 1 pound pasta (such as cavatappi or penne)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1 cup grated Gruyère cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the sliced onions and 1/2 teaspoon of salt. Cook slowly, stirring occasionally, for 20 to 25 minutes until the onions are deeply caramelized and sweet. Stir in the sugar during the last 5 minutes of cooking.
  2. If using wine, pour it in and scrape up any browned bits from the bottom of the pan. Cook until the liquid evaporates, about 2 minutes.
  3. Pour in the beef broth, add the dried thyme, pepper, and the remaining 1/2 teaspoon of salt. Bring the mixture to a simmer.
  4. Add the dry pasta to the skillet. Stir well to coat the pasta in the liquid.
  5. Cover the skillet, reduce the heat to medium-low, and cook for 12 to 15 minutes, stirring every few minutes to prevent sticking, until the pasta is al dente and most of the liquid is absorbed.
  6. Remove the skillet from the heat. Stir in the heavy cream.
  7. Add 3/4 cup of the Gruyère cheese and all of the Parmesan cheese. Stir until the cheeses melt and create a creamy sauce.
  8. Serve immediately in bowls. Top each serving with the remaining 1/4 cup of Gruyère cheese and the fresh parsley.
