8 slices thick-cut bread (like challah or brioche), cut into 1-inch strips

1/4 cup granulated sugar
2 tablespoons brown sugar
1 teaspoon ground cinnamon
Instructions
Preheat your oven to 400°F (200°C) or your air fryer to 375°F (190°C). Line a baking sheet with parchment paper if using the oven.
In a shallow dish, whisk together the eggs, milk, vanilla extract, 1 teaspoon cinnamon, and nutmeg until well combined.
In a separate shallow dish, combine the granulated sugar, brown sugar, and 1 teaspoon cinnamon for the coating.
Dip each bread strip into the egg mixture, ensuring it’s coated on all sides. Let excess drip off.
Roll the coated bread strips in the cinnamon-sugar mixture until evenly coated.
For oven baking: Place the coated strips in a single layer on the prepared baking sheet. Brush the tops with melted butter. Bake for 10-12 minutes, flipping halfway through, until golden brown and cooked through.
For air frying: Place the coated strips in the air fryer basket in a single layer (you may need to work in batches). Brush the tops with melted butter. Air fry for 6-8 minutes, flipping halfway through, until golden brown and cooked through.
Serve immediately with your favorite syrup for dipping.
Notes
For make-ahead convenience, prepare the sticks up to step 5, then freeze them in a single layer on a baking sheet until solid. Transfer to a freezer bag. Reheat in the oven or air fryer until warm and crispy.
You can adjust the cinnamon-sugar ratio to your preference.
