A quick and simple fruit pizza using refrigerated sugar cookie dough, topped with a creamy frosting and fresh fruit.

  • 1 (16.5 ounce) package refrigerated sugar cookie dough
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh fruit, sliced or chopped (e.g., strawberries, blueberries, kiwi, mandarin oranges)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Press the sugar cookie dough evenly onto the bottom of a 12-inch pizza pan or a baking sheet lined with parchment paper.
  3. Bake for 12-15 minutes, or until the edges are golden brown and the center is set. Let it cool completely.
  4. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Spread the cream cheese frosting evenly over the cooled sugar cookie crust.
  6. Arrange the mixed fresh fruit over the frosting to create your desired design.
  7. Chill for at least 30 minutes before slicing and serving.

Notes

  • For mini fruit pizzas, press cookie dough into mini muffin tins or shape small rounds on a baking sheet. Adjust baking time as needed.
  • You can use any combination of your favorite fruits. Ensure the fruit is dry before placing it on the pizza to prevent sogginess.
  • For a different flavor, try adding a pinch of lemon zest to the cream cheese frosting.
