Ingredients
Scale
1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
1 tablespoon olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/4 cup chicken broth
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Cut the chicken breast into uniform 1-inch cubes. Season the chicken pieces with salt, pepper, and paprika.
Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces to the hot skillet in a single layer, avoiding overcrowding.
Cook the chicken for 5 to 7 minutes, turning occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
Reduce the heat to medium. Add the butter to the same skillet. Once the butter melts, add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic burn.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let the sauce simmer for 1 minute until it slightly thickens.
Return the cooked chicken bites to the skillet. Toss the chicken to coat it completely in the garlic butter sauce.
Remove the skillet from the heat. Garnish with fresh chopped parsley before serving immediately.
Notes
For crispier bites, you can lightly dredge the seasoned chicken in 1 tablespoon of cornstarch before searing.
Serve these chicken bites over rice, pasta, or alongside roasted vegetables for a complete meal.
If you are planning meals for the week, this recipe works well for meal planning and can be reheated easily.
