2 (1-inch thick) boneless pork chops
1 tablespoon olive oil
2 tablespoons unsalted butter
4 cloves garlic, minced
1/2 teaspoon dried thyme
1/4 cup chicken broth
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley
Salt and black pepper to taste
Instructions
Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Add pork chops to the hot skillet and sear for 3-4 minutes per side, until golden brown and cooked through. The internal temperature should reach 145°F (63°C). Remove pork chops from the skillet and set aside.
Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and thyme. Cook for about 1 minute until fragrant, being careful not to burn the garlic.
Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. Let the sauce simmer for 2-3 minutes until slightly reduced.
Return the pork chops to the skillet and spoon the garlic butter sauce over them.
Stir in the chopped fresh parsley.
Serve the pork chops immediately, spooning extra sauce over the top.

Serve with your favorite sides like mashed potatoes, roasted vegetables, or a simple green salad.
For extra flavor, you can add a splash of white wine to the sauce along with the chicken broth.
