Crispy roasted potatoes with a rich garlic butter and herb coating, perfect as a side dish for any meal.

  • 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, cover the potatoes with cold water and add a pinch of salt. Bring to a boil and cook for 5-7 minutes, until slightly tender. Drain well.
  3. In a small skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Remove from heat.
  4. In a large bowl, toss the drained potatoes with olive oil, salt, and pepper.
  5. Add the garlic butter mixture, chopped parsley, and chives to the bowl with the potatoes. Toss to coat evenly.
  6. Spread the potatoes in a single layer on a baking sheet.
  7. Roast for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
  8. Serve hot.

  • For extra crispy potatoes, ensure they are well-drained after parboiling.
  • You can add other herbs like rosemary or thyme along with the parsley and chives.
  • These potatoes pair well with steak, chicken, or fish.
