Make rich, fluffy garlic butter rice quickly using chicken broth for deep flavor. This simple side dish is ready in under 20 minutes and pairs well with any main course.

  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 small yellow onion, finely chopped
  • 1 1/2 cups long grain white rice, uncooked
  • 2 1/2 cups chicken broth (or stock)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil and 2 tablespoons of the butter in a medium saucepan over medium heat.
  2. Add the chopped onion and cook until soft, about 3 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
  4. Add the uncooked rice to the pan. Stir constantly for 1-2 minutes to toast the grains lightly.
  5. Pour in the chicken broth, salt, and pepper. Bring the mixture to a boil.
  6. Once boiling, immediately reduce the heat to low, cover the saucepan tightly, and simmer for 15 minutes without lifting the lid.
  7. Remove the pan from the heat and let it stand, covered, for 5 minutes. This step helps the rice steam and become fluffy.
  8. Remove the lid. Add the remaining 2 tablespoons of butter. Fluff the rice gently with a fork, incorporating the melted butter.
  9. Stir in half of the fresh parsley. Garnish with the remaining parsley before serving.

Notes

  • For extra richness, substitute half of the chicken broth with heavy cream, adding it with the broth in step 4.
  • Rinsing the rice before cooking is optional; skipping this step can result in slightly creamier rice, which works well with the butter sauce.
  • This rice is a great alternative when you are looking at meal planning options but want something fast and homemade.
