A quick and flavorful garlic butter salmon recipe, perfect for a weeknight dinner. This dish can be made on a sheet pan or in a skillet and is ready in about 20 minutes.

Ingredients

  • 1.5 lbs salmon fillet
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup lemon juice
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: Asparagus or broccoli for roasting

Instructions

  1. Preheat your oven to 400°F (200°C) if using a sheet pan. If using a skillet, heat the olive oil over medium-high heat.
  2. Pat the salmon fillet dry with paper towels. Season with salt and pepper.
  3. If using a sheet pan, place the salmon on the pan. If using a skillet, place the salmon skin-side down (if applicable) in the hot oil.
  4. In a small bowl, melt the butter. Stir in the minced garlic, lemon juice, and parsley.
  5. Pour or brush the garlic butter mixture over the salmon.
  6. If using a sheet pan, roast for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C). If adding vegetables, toss them with a little olive oil, salt, and pepper and add them to the pan during the last 10 minutes of cooking.
  7. If using a skillet, cook for 4-5 minutes per side, basting with the garlic butter sauce, until cooked through.
  8. Serve immediately.

Notes

  • For a crispier skin, start the salmon skin-side down in a hot skillet and do not move it for the first few minutes.
  • You can add other vegetables like green beans or cherry tomatoes to the sheet pan.
  • This recipe is easily adaptable for meal prep bowls.
