1.5 lbs salmon fillet
2 tbsp olive oil
4 tbsp unsalted butter
4 cloves garlic, minced
1/4 cup lemon juice
1 tsp dried parsley
1/2 tsp salt
1/4 tsp black pepper
Optional: Asparagus or broccoli for roasting
Instructions
Preheat your oven to 400°F (200°C) if using a sheet pan. If using a skillet, heat the olive oil over medium-high heat.
Pat the salmon fillet dry with paper towels. Season with salt and pepper.
If using a sheet pan, place the salmon on the pan. If using a skillet, place the salmon skin-side down (if applicable) in the hot oil.
In a small bowl, melt the butter. Stir in the minced garlic, lemon juice, and parsley.
Pour or brush the garlic butter mixture over the salmon.
If using a sheet pan, roast for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C). If adding vegetables, toss them with a little olive oil, salt, and pepper and add them to the pan during the last 10 minutes of cooking.
If using a skillet, cook for 4-5 minutes per side, basting with the garlic butter sauce, until cooked through.
Serve immediately.
Notes
For a crispier skin, start the salmon skin-side down in a hot skillet and do not move it for the first few minutes.
You can add other vegetables like green beans or cherry tomatoes to the sheet pan.
