Garlic Butter Steak with Pan Sauce

A quick and flavorful skillet steak recipe perfect for a date night dinner, featuring a rich garlic butter pan sauce.

  • 2 (6-8 ounce) steaks (such as ribeye, New York strip, or filet mignon)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup beef broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and freshly ground black pepper to taste

Instructions

  1. Pat the steaks dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a cast iron skillet over medium-high heat until shimmering.
  3. Sear steaks for 3-4 minutes per side for medium-rare, or to your desired doneness. Remove steaks from skillet and set aside.
  4. Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute.
  5. Pour in beef broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
  6. Stir in heavy cream and Parmesan cheese. Cook, stirring, until the sauce thickens slightly, about 2-3 minutes.
  7. Return steaks to the skillet and spoon the sauce over them. Cook for 1 minute to warm through.
  8. Stir in fresh parsley.
  9. Serve steaks immediately, topped with the garlic butter pan sauce.

Notes

  • For a different flavor, you can omit the cream and Parmesan cheese and simply reduce the beef broth with the garlic and butter to create a lighter pan sauce.
  • Ensure your skillet is hot before adding the steaks for a good sear.
  • Use a meat thermometer to check for your preferred level of doneness.
