2 (6-8 ounce) steaks (such as ribeye, New York strip, or filet mignon)
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1/2 cup beef broth
1/4 cup heavy cream
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Salt and freshly ground black pepper to taste
Instructions
Pat the steaks dry with paper towels and season generously with salt and pepper.
Heat olive oil in a cast iron skillet over medium-high heat until shimmering.
Sear steaks for 3-4 minutes per side for medium-rare, or to your desired doneness. Remove steaks from skillet and set aside.
Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute.
Pour in beef broth and scrape up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes.
Stir in heavy cream and Parmesan cheese. Cook, stirring, until the sauce thickens slightly, about 2-3 minutes.
Return steaks to the skillet and spoon the sauce over them. Cook for 1 minute to warm through.
Stir in fresh parsley.
Serve steaks immediately, topped with the garlic butter pan sauce.
Notes
For a different flavor, you can omit the cream and Parmesan cheese and simply reduce the beef broth with the garlic and butter to create a lighter pan sauce.
Ensure your skillet is hot before adding the steaks for a good sear.
Use a meat thermometer to check for your preferred level of doneness.
