Garlic Herb Turkey Breast Roast

A juicy turkey breast infused with garlic-herb butter and crisp skin, perfect for small holiday gatherings.

  • 1 (3-4 pound) boneless turkey breast, skin on
  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon chopped fresh sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine the softened butter, minced garlic, rosemary, thyme, sage, salt, and pepper. Mix well to create a garlic herb butter.
  3. Carefully loosen the skin from the turkey breast by sliding your fingers between the skin and the meat, being careful not to tear the skin.
  4. Spread about half of the garlic herb butter evenly under the skin, directly onto the turkey breast meat.
  5. Spread the remaining garlic herb butter over the top of the turkey skin.
  6. Place the turkey breast in a roasting pan. Pour the chicken broth into the bottom of the pan.
  7. Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the breast registers 165°F (74°C). Baste the turkey with the pan juices every 20-30 minutes.
  8. If the skin starts to brown too quickly, you can loosely tent the breast with aluminum foil.
  9. Once cooked, remove the turkey from the oven and let it rest for 10-15 minutes before carving.
  10. While the turkey rests, you can make pan gravy using the drippings in the roasting pan.

Notes

  • For extra flavor, you can add a lemon half and a few sprigs of fresh herbs to the roasting pan.
  • Carve the turkey breast against the grain for the most tender slices.
  • This recipe is a great alternative to a full-sized turkey for smaller Thanksgiving celebrations or Sunday dinners.
