  • 3 lbs Yukon Gold potatoes, peeled and quartered
  • 1 large head of garlic
  • 4 tablespoons olive oil (for roasting garlic)
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 8 tablespoons unsalted butter, softened
  • 1 teaspoon salt, plus more for boiling water
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chives, chopped (optional garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Slice the top quarter off the head of garlic to expose the cloves. Place the head on a piece of foil, drizzle with 4 tablespoons of olive oil, and wrap tightly.
  3. Roast the garlic for 40 to 50 minutes, or until the cloves are soft and caramelized. Let cool slightly.
  4. Place the peeled and quartered potatoes in a large pot and cover with cold, salted water by about one inch.
  5. Bring the water to a boil, then reduce heat and simmer for 15 to 20 minutes, or until the potatoes are easily pierced with a fork.
  6. Drain the potatoes thoroughly and return them to the hot, empty pot over low heat for one minute to dry out any excess moisture.
  7. Squeeze the soft, roasted garlic pulp from the skins into the potatoes.
  8. Add the softened butter, heavy cream, milk, salt, and pepper to the pot.
  9. Using a potato masher or a hand mixer on low speed, mash the potatoes until they are creamy and smooth. Do not overmix.
  10. Taste and adjust salt and pepper as needed.
  11. Serve immediately, garnished with fresh chives if desired.

Notes

  • For make ahead mashed potatoes, prepare through step 8. Cool completely, then store in an airtight container in the refrigerator for up to two days. Reheat gently on the stovetop with a splash of extra milk or cream.
  • Yukon Gold potatoes yield the creamiest texture, but Russets also work well for a fluffier result.
