Make these quick, flavorful noodles featuring a sticky, savory sauce with a hint of spice. This recipe delivers restaurant-style taste in under 20 minutes, perfect for a weeknight dinner or a satisfying side dish.

  • 12 oz dried noodles (ramen, spaghetti, or linguine)
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 20 cloves fresh garlic, minced (use 20 cloves for best flavor)
  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tablespoons hoisin sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon chili garlic sauce (adjust to your heat preference)
  • 1 teaspoon toasted sesame oil
  • 1/4 cup reserved noodle water
  • 2 tablespoons grated Parmesan cheese (optional, for serving)
  • 2 scallions, thinly sliced, for garnish

Instructions

  1. Cook the noodles according to package directions until al dente. Before draining, reserve about 1/2 cup of the starchy cooking water. Drain the noodles and set aside.
  2. In a large skillet or wok, melt the butter with the olive oil over medium heat.
  3. Add the minced garlic to the skillet. Cook for 1 to 2 minutes, stirring constantly, until the garlic is fragrant. Do not let the garlic brown or burn.
  4. In a small bowl, whisk together the soy sauce, hoisin sauce, oyster sauce, honey, chili garlic sauce, and sesame oil to create the sauce base.
  5. Pour the sauce mixture into the skillet with the garlic. Cook for about 30 seconds, stirring well.
  6. Add the cooked noodles and about 1/4 cup of the reserved noodle water to the skillet. Toss everything together quickly until the noodles are evenly coated with the sticky sauce. Add a little more noodle water if the sauce seems too thick.
  7. Remove the skillet from the heat. If you are using Parmesan cheese, toss it in now until melted and incorporated.
  8. Divide the noodles among serving bowls. Garnish with sliced scallions before you serve them immediately.

Notes

  • For a main dish, add cooked chicken, shrimp, or steak during Step 4 when you add the sauce.
  • If you prefer a less spicy dish, start with just 1/2 teaspoon of chili garlic sauce.
  • You can substitute the butter with vegan butter if you need a vegetarian option, but note that Parmesan cheese is not included in that case.
