2 pounds sweet potatoes, peeled and cut into 1-inch cubes
4 tablespoons unsalted butter, melted
4 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional)
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
In a large bowl, toss the sweet potato cubes with melted butter, minced garlic, salt, and pepper until evenly coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet.
Roast for 20 minutes.
Remove the baking sheet from the oven and sprinkle the Parmesan cheese over the sweet potatoes.
Return to the oven and roast for another 10-15 minutes, or until the sweet potatoes are tender and lightly browned, and the cheese is melted and golden.
Garnish with fresh parsley, if desired, before serving.
Notes
For make-ahead, roast the sweet potatoes without the Parmesan until tender. Let cool completely, then refrigerate. Reheat on a baking sheet at 350°F (175°C) for 10-15 minutes, then add Parmesan and roast for another 5-10 minutes until golden.
Ensure sweet potatoes are cut into uniform sizes for even cooking.
