1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1/4 cup soy sauce
2 tablespoons rice vinegar
1 tablespoon honey
1 tablespoon cornstarch
1 teaspoon sesame oil
1/2 teaspoon red pepper flakes
1/4 cup all-purpose flour
1 large egg, beaten
1/4 cup vegetable oil, plus more for frying
Cooked rice, for serving
Sesame seeds, for garnish
Chopped green onions, for garnish
Instructions
In a bowl, whisk together soy sauce, rice vinegar, honey, cornstarch, sesame oil, and red pepper flakes. Set aside.
In a separate bowl, toss chicken pieces with flour until coated.
Dip floured chicken into the beaten egg, then dip again into the flour mixture, ensuring a good coating.
Heat 1/4 cup vegetable oil in a large skillet or wok over medium-high heat. Add chicken in a single layer, working in batches if necessary, and cook until golden brown and cooked through, about 5-7 minutes per batch. Remove chicken from skillet and set aside.
Add the prepared sauce to the same skillet. Bring to a simmer and cook, stirring, until thickened, about 1-2 minutes.
Return the cooked chicken to the skillet and toss to coat in the sauce.
Serve immediately over cooked rice, garnished with sesame seeds and green onions.
Notes
For an air fryer version, toss coated chicken with a little oil and air fry at 400°F (200°C) for 10-12 minutes, or until cooked through and crispy. Then toss with the sauce.
Adjust red pepper flakes for your preferred spice level.
