Elegant and easy goat cheese and honey bites made with puff pastry. A perfect sweet and savory appetizer for any gathering.

Ingredients

  • 1 sheet puff pastry, thawed
  • 4 oz goat cheese, softened
  • 2 tbsp honey, plus more for drizzling
  • 1 tbsp fresh thyme leaves (optional)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unfold the puff pastry sheet onto a lightly floured surface. Cut it into 12 equal squares.
  3. In a small bowl, combine the softened goat cheese and 2 tablespoons of honey. Mix until smooth.
  4. Place about 1 teaspoon of the goat cheese mixture onto the center of each puff pastry square.
  5. Brush the edges of the pastry squares with the beaten egg wash.
  6. Bring the four corners of each pastry square up to the center and pinch them together to enclose the filling.
  7. Place the bites onto the prepared baking sheet.
  8. Brush the tops of the bites with the remaining egg wash.
  9. Bake for 15-20 minutes, or until the pastry is golden brown and puffed.
  10. Remove from oven and let cool slightly. Drizzle with additional honey and sprinkle with fresh thyme leaves, if desired.

Notes

  • For a make-ahead option, assemble the bites and refrigerate them on the baking sheet for up to 2 hours before baking. You may need to add a few extra minutes to the baking time.
  • These bites are best served warm.
  • You can substitute cream cheese for goat cheese if preferred, but the flavor will be less tangy.
  • Consider pairing these with a light salad for a simple lunch.
