Make this hearty Italian Grinder Salad, inspired by the classic deli sandwich. It features crisp lettuce, savory deli meats, provolone cheese, and a tangy red wine vinaigrette, offering a satisfying, low-carb dinner.

Ingredients

Scale
  • 1 head iceberg lettuce, finely chopped
  • 8 oz salami, thinly sliced or chopped
  • 8 oz sliced turkey breast
  • 6 slices provolone cheese, chopped
  • 1/2 cup sliced pepperoni
  • 1/2 cup sliced banana peppers or pepperoncini
  • 1/2 cup chopped black olives
  • 1/2 cup grape or cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 1/4 cup croutons (optional)
  • 1/4 cup grated Parmesan cheese
  • For the Dressing:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon mayonnaise (for creaminess, optional)

Instructions

  1. Prepare the dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, oregano, minced garlic, Dijon mustard, salt, pepper, and mayonnaise (if using). Taste and adjust seasoning.
  2. Prepare the salad base: In a large bowl, combine the chopped iceberg lettuce, salami, turkey, provolone cheese, pepperoni, banana peppers, olives, tomatoes, and red onion.
  3. Toss the salad: Pour about half of the dressing over the salad ingredients. Toss everything gently until the ingredients are evenly coated. Add more dressing as needed to reach your desired level of coating.
  4. Finish and serve: Sprinkle the top with Parmesan cheese and croutons, if using. Serve immediately as a main course.

Notes

  • For a creamier dressing, increase the mayonnaise to 2 tablespoons or add 1 tablespoon of Italian dressing mix.
  • This salad works well for meal planning; store the dressing separately and combine just before eating to keep the lettuce crisp.
