Make this comforting and easy ground beef and dumpling soup for a satisfying weeknight dinner. The dumplings are simple to prepare and cook right in the flavorful broth.

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded green cabbage
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt (for dumplings)
  • 1/2 cup milk
  • 2 tablespoons melted butter (for dumplings)

Instructions

  1. Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess fat.
  2. Add the chopped onion, carrots, and celery to the pot with the beef. Cook until the vegetables soften, about 5 minutes.
  3. Pour in the beef broth. Add the thyme, bay leaf, salt, and pepper. Bring the soup to a simmer.
  4. While the soup simmers, prepare the dumplings. In a small bowl, whisk together the flour, baking powder, and salt for the dumplings.
  5. In a separate small bowl, mix the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the dough will be sticky.
  6. Reduce the heat on the soup to low so it maintains a gentle simmer. Stir in the shredded cabbage.
  7. Drop the dumpling dough by rounded teaspoonfuls directly onto the surface of the simmering soup. Do not crowd the dumplings; leave space between them.
  8. Cover the pot tightly and cook for 15 minutes without lifting the lid. This allows the dumplings to steam and cook through.
  9. Remove the bay leaf before serving. Ladle the hearty ground beef soup and dumplings into bowls.

Notes

  • For a quicker option, you can use store-bought wonton wrappers instead of making homemade dumplings. Add them during the last 5 minutes of simmering.
  • If you prefer a richer broth, substitute 1 cup of the beef broth with a dry red wine and let it cook down before adding the remaining broth.
