A simple and hearty one-pot ground beef orzo recipe perfect for a quick weeknight dinner. This family-friendly meal is easy to make and clean up.

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup orzo pasta
  • 1/2 cup shredded Parmesan cheese
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute more until fragrant.
  4. Pour in the beef broth and diced tomatoes (with their juice). Bring the mixture to a boil.
  5. Stir in the orzo pasta. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the orzo is tender and most of the liquid has been absorbed, stirring occasionally.
  6. Remove from heat and stir in the shredded Parmesan cheese.
  7. Garnish with fresh parsley, if desired, before serving.

Notes

  • For a richer flavor, you can use a combination of beef and chicken broth.
  • Add your favorite vegetables like spinach or peas in the last 5 minutes of cooking.
  • This recipe is easily adaptable to different types of ground meat.
