A simple and hearty low-carb casserole featuring ground beef, zucchini, marinara sauce, and melted cheese. Perfect for weeknight dinners and meal prep.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchini, thinly sliced
  • 1 (15 ounce) can marinara sauce
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Stir in the marinara sauce, Italian seasoning, salt, and pepper. Bring to a simmer.
  5. Arrange the thinly sliced zucchini in an even layer in the bottom of a 9×13 inch baking dish.
  6. Pour the ground beef and marinara mixture over the zucchini.
  7. In a small bowl, combine the mozzarella and cheddar cheeses. Sprinkle evenly over the top of the casserole.
  8. Bake for 25-30 minutes, or until the cheese is melted and bubbly and the zucchini is tender.
  9. Let stand for 5 minutes before serving.
