1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
2 medium zucchini, thinly sliced
1 (15 ounce) can marinara sauce
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
Stir in the marinara sauce, Italian seasoning, salt, and pepper. Bring to a simmer.
Arrange the thinly sliced zucchini in an even layer in the bottom of a 9×13 inch baking dish.
Pour the ground beef and marinara mixture over the zucchini.
In a small bowl, combine the mozzarella and cheddar cheeses. Sprinkle evenly over the top of the casserole.
Bake for 25-30 minutes, or until the cheese is melted and bubbly and the zucchini is tender.
Let stand for 5 minutes before serving.
