A quick and easy one-pan ground chicken fried rice recipe that is better than takeout and perfect for a weeknight meal.

  • 1 tablespoon vegetable oil
  • 1 pound ground chicken
  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 4 cups cooked and cooled rice (day-old rice works best)
  • 2 large eggs, lightly beaten
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, sliced

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat. Add ground chicken and cook, breaking it up with a spoon, until browned and cooked through. Remove chicken from skillet and set aside.
  2. Add chopped onion, carrots, and peas to the skillet. Cook, stirring occasionally, until vegetables are tender-crisp, about 5-7 minutes.
  3. Add minced garlic and grated ginger to the skillet and cook for 1 minute more until fragrant.
  4. Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty side and scramble until cooked through.
  5. Add the cooked rice and reserved ground chicken to the skillet. Stir everything together.
  6. Pour soy sauce and sesame oil over the rice mixture. Stir well to combine and heat through, about 3-5 minutes.
  7. Stir in sliced green onions. Serve hot.
