1.5 pounds ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1 large onion, sliced
8 ounces mushrooms, sliced
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups beef broth
1 teaspoon Worcestershire sauce
Salt and pepper to taste
Instructions
In a bowl, combine ground beef, breadcrumbs, milk, egg, salt, and pepper. Mix gently until just combined. Form into 4 equal patties.
Heat olive oil in a large skillet over medium-high heat. Sear patties for 3-4 minutes per side, until browned. Remove patties from skillet and set aside.
Add sliced onion and mushrooms to the skillet. Cook until softened and lightly browned, about 5-7 minutes.
Push the vegetables to one side of the skillet. Add butter to the empty side. Once melted, whisk in flour to create a roux. Cook for 1 minute.
Gradually whisk in beef broth and Worcestershire sauce. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
Return the hamburger steaks to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until cooked through and the gravy has thickened.
Season gravy with salt and pepper to taste.
Serve hot, ideally with mashed potatoes.
Notes
For a Salisbury steak style, you can add a splash of soy sauce to the gravy.
