Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red apple
  • 2 tablespoons chopped pecans or walnuts (optional)
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, combine Greek yogurt, Dijon mustard, honey, and apple cider vinegar. Whisk until smooth.
  2. Add the shredded chicken, chopped celery, chopped apple, and nuts (if using) to the bowl.
  3. Stir everything together until the chicken and vegetables are well coated with the dressing.
  4. Season with salt and black pepper to your preference.
  5. Serve immediately or chill for later.
