Cook a moist and flavorful turkey breast quickly in your Instant Pot. This recipe is perfect for weeknight dinners or as a simple holiday main dish, and includes instructions for a simple gravy made in the same pot.

  • 1 (3 to 4 lb) bone-in or boneless turkey breast
  • 1 cup chicken broth or water
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For Gravy: 2 tablespoons butter
  • For Gravy: 2 tablespoons all-purpose flour
  • For Gravy: 1 cup reserved turkey cooking liquid

Instructions

  1. Pat the turkey breast dry with paper towels.
  2. In a small bowl, mix together the thyme, rosemary, garlic powder, onion powder, salt, and pepper. Rub this seasoning mix evenly over the entire surface of the turkey breast.
  3. Pour the chicken broth or water into the inner pot of your Instant Pot. Place the trivet inside the pot.
  4. Carefully place the seasoned turkey breast on top of the trivet.
  5. Secure the lid on the Instant Pot and set the valve to the sealing position.
  6. Cook on High Pressure for 45 minutes for a 3-4 lb breast.
  7. When the cooking time finishes, allow a Natural Pressure Release (NPR) for 10 minutes, then carefully move the valve to quick release any remaining pressure.
  8. Remove the turkey breast from the pot and cover it loosely with foil. Let it rest for 10 minutes.
  9. Prepare the gravy: Carefully pour the cooking liquid from the pot into a measuring cup, reserving at least 1 cup. Discard any solids or fat from the liquid if desired.
  10. Set the Instant Pot to Sauté mode. Melt the butter in the pot.
  11. Whisk the flour into the melted butter until a smooth paste (roux) forms. Cook for 1 minute, stirring constantly.
  12. Slowly whisk in 1 cup of the reserved cooking liquid until the gravy thickens.
  13. Slice the turkey breast and serve immediately with the gravy.

Notes

  • For a bone-in breast, you may need to add 5-10 minutes to the cooking time.
  • If you want to crisp the skin, place the cooked turkey breast on a baking sheet and broil for 3-5 minutes until the skin browns. Watch it closely to prevent burning.
  • This quick cooking method is a great alternative to traditional roasting, similar to the precision you get with a sous-vide precision cooker for moisture retention.
