1 pound Italian sausage, casings removed
1 medium yellow onion, chopped
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (16 ounce) package potato gnocchi
3 cups fresh spinach

Instructions
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.
Add chopped onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
Pour in chicken broth and heavy cream. Add Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
Stir in the potato gnocchi. Cook according to package directions, usually about 5-7 minutes, until the gnocchi float to the surface.
Stir in the fresh spinach and cook until wilted, about 2 minutes.
Ladle soup into bowls and serve immediately, topped with grated Parmesan cheese.
Notes
For a lighter soup, you can substitute half-and-half for heavy cream.
If you don’t have fresh spinach, you can use frozen spinach; thaw and squeeze out excess water before adding.
