A quick and creamy one-pot soup with Italian sausage, tender gnocchi, and fresh spinach. Perfect for a weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (16 ounce) package potato gnocchi
  • 3 cups fresh spinach
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.
  2. Add chopped onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and heavy cream. Add Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  4. Stir in the potato gnocchi. Cook according to package directions, usually about 5-7 minutes, until the gnocchi float to the surface.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. Ladle soup into bowls and serve immediately, topped with grated Parmesan cheese.

Notes

  • For a lighter soup, you can substitute half-and-half for heavy cream.
  • If you don’t have fresh spinach, you can use frozen spinach; thaw and squeeze out excess water before adding.
