Make this simple, flavorful keto chicken taco soup for a satisfying low carb dinner. It is quick to prepare and perfect for weeknight meals.

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (10 ounce) can diced tomatoes with green chilies (no sugar added), undrained
  • 4 cups chicken broth
  • 1 (4 ounce) can diced green chilies, undrained
  • 2 tablespoons keto taco seasoning (see notes for mix)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 8 ounces cream cheese, cubed
  • 1 cup shredded cheddar or Monterey Jack cheese, for topping
  • 1/2 cup sour cream, for topping
  • 1 avocado, sliced, for topping
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Place the chicken breasts in a large pot or Dutch oven. Add chicken broth, diced tomatoes with green chilies, green chilies, taco seasoning, cumin, and oregano.
  2. Bring the mixture to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 20 minutes, or until the chicken is fully cooked.
  3. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  4. Stir in the cubed cream cheese until it is completely melted and the soup is creamy. Season with salt and pepper to your taste.
  5. Simmer for another 5 minutes, stirring occasionally, until heated through.
  6. Ladle the keto chicken taco soup into bowls. Top each serving with shredded cheese, a dollop of sour cream, sliced avocado, and fresh cilantro.

Notes

  • For homemade low carb taco seasoning: mix 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon dried oregano, and a pinch of cayenne pepper.
  • You can cook this as a slow cooker keto chicken chili: place all ingredients except cream cheese and toppings in the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. Shred chicken, stir in cream cheese, and serve.
