Hearty Kielbasa Potato Soup

A quick and creamy kielbasa and potato soup, perfect for a weeknight meal. This one-pot soup is packed with smoky sausage and tender potatoes for a comforting and budget-friendly dish.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 pounds potatoes, peeled and diced
  • 1 cup milk
  • 1/2 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add kielbasa and cook until browned on both sides. Remove kielbasa and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Return the browned kielbasa to the pot. Stir in milk and cheddar cheese (if using) until cheese is melted and soup is creamy.
  5. Season with salt and pepper to taste. Serve hot.

Notes

  • For a thicker soup, mash some of the cooked potatoes against the side of the pot before adding the milk.
  • Serve with crusty bread for a complete meal.
  • This soup is a great option for meal planning and can be made ahead.
