Easy Lasagna Roll Ups

Enjoy these simple, cheesy lasagna roll ups filled with ricotta and spinach, baked in marinara sauce. They are perfect for a family dinner, portion-controlled, and freezer-friendly.

  • 12 lasagna noodles
  • 15 ounces ricotta cheese
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 1 large egg, lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 24 ounces marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Cook lasagna noodles according to package directions until al dente. Drain and lay flat on parchment paper.
  2. In a medium bowl, combine ricotta cheese, squeezed spinach, beaten egg, Parmesan cheese, salt, and pepper. Mix well.
  3. Spread about 1/4 cup of the ricotta mixture evenly over each cooked lasagna noodle, leaving a small border at one end.
  4. Starting from the filled end, carefully roll up each noodle.
  5. Pour about 1 cup of marinara sauce into the bottom of a 9×13 inch baking dish.
  6. Arrange the lasagna roll ups seam-side down in the baking dish over the sauce.
  7. Pour the remaining marinara sauce over the top of the roll ups.
  8. Sprinkle the shredded mozzarella cheese evenly over the sauce.
  9. Cover the baking dish with foil. Bake for 20 minutes.
  10. Remove the foil and bake for another 10-15 minutes, or until the cheese is melted and bubbly and the sauce is heated through.
  11. Let stand for 5-10 minutes before serving.

Notes

  • For a make-ahead meal, assemble the roll ups, cover tightly, and refrigerate for up to 24 hours before baking. Add a few extra minutes to the covered baking time.
  • These roll ups also freeze well. Cool completely, then wrap individual portions or the entire dish tightly and freeze for up to 3 months. Thaw in the refrigerator overnight and reheat in the oven or microwave.
  • You can add cooked ground beef or Italian sausage to the ricotta mixture for a heartier meal.
