1 pound ground beef
1 pound Italian sausage, casings removed
1 large onion, chopped
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon red pepper flakes (optional)
6 cups beef broth
1 (28 ounce) can crushed tomatoes
1 (15 ounce) can tomato sauce
1/2 cup dry lasagna noodles, broken into pieces
1/4 cup chopped fresh parsley
Salt and black pepper to taste
1 cup ricotta cheese
1/4 cup grated Parmesan cheese
Fresh basil leaves for garnish (optional)
Cooked lasagna noodles for serving (optional)
Instructions
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and Italian sausage. Cook, breaking up the meat with a spoon, until browned. Drain off excess grease.
Add chopped onion to the pot and cook until softened, about 5 minutes. Stir in minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Cook for 1 minute more until fragrant.
Pour in beef broth, crushed tomatoes, and tomato sauce. Bring the mixture to a boil.
Add the broken lasagna noodles to the pot. Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until the noodles are tender, stirring occasionally to prevent sticking.
Stir in chopped fresh parsley. Season with salt and black pepper to taste.
To serve, ladle the soup into bowls. Top each serving with a dollop of ricotta cheese and a sprinkle of Parmesan cheese. Garnish with fresh basil leaves if desired. You can also serve with cooked lasagna noodles on the side.
Notes
For a vegetarian option, omit the meat and use vegetable broth. Add extra vegetables like spinach or mushrooms.
If you don’t have lasagna noodles, you can use other short pasta shapes.
