  • 6 cups low-sodium chicken broth
  • 1 cup shredded cooked chicken breast
  • 1/2 cup orzo pasta
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 large eggs
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, bring the chicken broth to a simmer over medium heat.
  2. Add the orzo pasta to the simmering broth. Cook according to package directions, usually about 8 to 10 minutes, until al dente.
  3. Stir in the shredded cooked chicken and heat through for 2 minutes. Reduce the heat to low.
  4. In a medium bowl, whisk together the cornstarch and cold water until smooth to create a slurry. Set aside.
  5. In a separate bowl, lightly whisk the eggs. Slowly whisk in the fresh lemon juice.
  6. Temper the egg mixture: Slowly drizzle about 1 cup of the hot broth into the egg-lemon mixture while whisking constantly. This prevents the eggs from scrambling.
  7. Pour the tempered egg mixture back into the pot of soup, stirring constantly over low heat. Do not let the soup boil after adding the eggs.
  8. Slowly whisk in the cornstarch slurry. Continue stirring gently until the soup thickens slightly, about 2 to 3 minutes.
  9. Remove the soup from the heat. Season with salt and pepper to your taste.
  10. Ladle the soup into bowls and garnish each serving with fresh parsley.

  • For a quicker meal, you can use rotisserie chicken for the shredded chicken.
  • If you are concerned about the egg tempering, you can skip the cornstarch slurry and rely solely on the egg-lemon mixture for thickening, but you must temper the eggs very carefully over low heat.
