This recipe combines classic meatloaf flavor with a creamy mashed potato crust in one easy-to-serve casserole format. It is a hearty, one dish dinner perfect for family meals.

  • 1 cup bread crumbs
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1/4 cup finely chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup ketchup (for meatloaf mix)
  • 3 cups prepared mashed potatoes (homemade or refrigerated)
  • 1/4 cup shredded cheddar cheese (optional topping)
  • 2 tablespoons ketchup or BBQ sauce (for final glaze)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, bread crumbs, egg, milk, chopped onion, salt, pepper, Worcestershire sauce, and 1/2 cup of ketchup. Mix gently with your hands until just combined; do not overmix.
  3. Press the meatloaf mixture evenly into the bottom of the prepared baking dish to form the base layer.
  4. Spread the 3 cups of prepared mashed potatoes evenly over the meatloaf layer, creating a smooth potato crust. You can use a fork to create decorative peaks if desired.
  5. Bake for 40 minutes.
  6. Remove the casserole from the oven. Spread the remaining 2 tablespoons of ketchup or BBQ sauce over the potato topping. If using cheese, sprinkle it over the sauce now.
  7. Return the casserole to the oven and bake for another 10 to 15 minutes, or until the meatloaf is cooked through (internal temperature reaches 160 degrees Fahrenheit) and the topping is lightly browned.
  8. Let the meatloaf casserole rest for 10 minutes before slicing and serving.

Notes

  • For the best flavor, use freshly made mashed potatoes. If using refrigerated mashed potatoes, ensure they are at room temperature before spreading.
  • To make this a make ahead casserole meal, assemble the entire dish through step 4, cover tightly with foil, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the initial baking time if baking straight from the refrigerator.
  • A simple gravy can be poured over individual servings instead of using the ketchup glaze for a different flavor profile.
