Make this fluffy, aromatic Mediterranean rice side dish seasoned with turmeric and cumin. It is quick to prepare and topped with crunchy pine nuts and fresh parsley for bright flavor.

  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 1/2 cups long-grain white rice (Basmati recommended)
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 1/2 cups vegetable broth
  • 1/4 cup pine nuts
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
  2. Add the minced garlic, turmeric, cumin, salt, and pepper to the saucepan. Cook for 1 minute until fragrant.
  3. Add the rice to the pan and stir constantly for 1 minute to coat the grains with the spices.
  4. Pour in the vegetable broth. Bring the mixture to a boil, then immediately reduce the heat to low, cover the saucepan tightly, and simmer for 15 minutes without lifting the lid.
  5. Remove the saucepan from the heat and let it stand, covered, for an additional 10 minutes. Do not lift the lid during this resting time.
  6. While the rice rests, toast the pine nuts. Place the pine nuts in a small, dry skillet over medium-low heat. Cook, stirring often, until lightly golden brown, about 3 to 4 minutes. Watch carefully to prevent burning.
  7. Fluff the cooked rice gently with a fork. Stir in the toasted pine nuts and chopped fresh parsley.
  8. Serve immediately as a healthy rice recipe or side dish.

Notes

  • For a Greek Lemon Rice variation, add the zest of one lemon and 2 tablespoons of fresh lemon juice when you fluff the rice at the end.
  • This recipe is naturally vegetarian and can be made vegan. It works well for meal planning.
