  • 1 teaspoon vanilla extract
  • 3 cups peeled, cored, and chopped fresh apples (about 3 medium apples)
  • 1/2 cup chopped pecans (optional)
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 tablespoon melted butter
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Gently fold in the chopped apples and pecans, if using.
  7. Pour the batter into the prepared cake pan and spread evenly.

  10. While the cake cools, prepare the glaze: Whisk together the powdered sugar, milk, melted butter, and vanilla extract until smooth. Add more milk, one teaspoon at a time, if the glaze is too thick.
  11. Drizzle the caramel glaze over the cooled cake before serving.
