A classic, creamy beef stroganoff recipe with tender beef, mushrooms, and a rich sour cream sauce served over egg noodles. This is a dependable comfort dinner perfect for any weeknight.

Ingredients

  • 1.5 lbs beef sirloin or tenderloin, thinly sliced
  • 1 lb egg noodles
  • 8 oz mushrooms, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 tbsp butter
  • 2 tbsp olive oil
  • 1/4 cup all-purpose flour
  • 3 cups beef broth
  • 1 cup sour cream
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook egg noodles according to package directions. Drain and set aside.
  2. While noodles cook, heat butter and olive oil in a large skillet over medium-high heat.
  3. Add sliced beef and cook until browned on all sides. Remove beef from skillet and set aside.
  4. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  5. Add sliced mushrooms and cook until browned and tender, about 7-10 minutes.
  6. Stir in minced garlic and cook for 1 minute until fragrant.
  7. Sprinkle flour over the mushroom and onion mixture and stir well to combine. Cook for 1-2 minutes.
  8. Gradually whisk in beef broth until smooth. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  9. Stir in Worcestershire sauce and Dijon mustard. Season with salt and pepper.
  10. Return the browned beef to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until beef is tender.
  11. Remove skillet from heat. Stir in sour cream until well combined and sauce is creamy. Do not boil after adding sour cream.
  12. Serve stroganoff over cooked egg noodles. Garnish with fresh parsley.

  • For a richer flavor, use a mix of button and cremini mushrooms.
  • If you don’t have beef sirloin, you can use flank steak or chuck roast, sliced thinly against the grain.
  • For a quicker meal, consider using pre-sliced mushrooms.
