  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

  • 10 egg roll wrappers
  • Cooking spray or oil for brushing/air frying
  • For the Drizzle: 1/2 cup powdered sugar, 1 tablespoon milk, 1/4 teaspoon vanilla extract
  • For Coating: 1/4 cup granulated sugar, 1 teaspoon ground cinnamon

Instructions

  1. Prepare the peach filling: In a medium bowl, combine the chopped peaches, lemon juice, granulated sugar, cinnamon, nutmeg, and cornstarch. Mix gently until the peaches are coated. Let this mixture sit for 5 minutes.
  2. Lay an egg roll wrapper flat on a clean surface with a corner pointing toward you (diamond shape). Place about 2 tablespoons of the peach filling near the bottom corner.
  3. Fold the bottom corner up over the filling. Fold the left and right corners inward toward the center.
  4. Roll the wrapper tightly upward toward the top corner. Lightly moisten the top edge of the wrapper with water to seal the roll completely. Repeat with the remaining filling and wrappers.
  5. Preheat your oven to 400°F (200°C) or your air fryer to 375°F (190°C).
  6. If baking: Place the egg rolls seam-side down on a baking sheet lined with parchment paper. Lightly spray the tops with cooking spray or brush with melted butter.
  7. If air frying: Place the egg rolls in a single layer in the air fryer basket, ensuring they do not touch. Lightly spray with cooking spray.
  8. Bake for 12-15 minutes or air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  9. While the rolls cook, prepare the cinnamon-sugar coating: In a shallow dish, mix the 1/4 cup sugar and 1 teaspoon cinnamon.
  10. As soon as the egg rolls come out of the oven or air fryer, immediately toss or brush them lightly with butter (optional) and roll them in the cinnamon-sugar mixture until coated.
  11. Prepare the drizzle: Whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk, one teaspoon at a time, if you prefer a thinner consistency.
  12. Serve the warm egg rolls immediately with the vanilla drizzle on the side. This recipe is a great alternative to traditional meal planning when you need a quick, satisfying sweet treat.

  • For a richer flavor, you can substitute the canned peaches with 2 cups of fresh or frozen (thawed) peaches.
