A fast and flavorful pepper steak stir fry with tender beef and a glossy garlic ginger sauce, perfect for a weeknight dinner.

Ingredients

  • 1 pound flank steak, thinly sliced against the grain
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil, divided
  • 1 medium onion, sliced
  • 2 bell peppers (any color), seeded and sliced
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 cup beef broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • Cooked rice, for serving

Instructions

  1. In a bowl, toss the sliced steak with soy sauce and cornstarch. Let it sit for 10 minutes.
  2. Heat 1/2 tablespoon of vegetable oil in a large skillet or wok over high heat. Add the steak in a single layer and sear for 1-2 minutes per side until browned. Remove steak from skillet and set aside.
  3. Add the remaining 1/2 tablespoon of vegetable oil to the skillet. Add the sliced onion and bell peppers. Stir-fry for 3-4 minutes until crisp-tender.
  4. Add the minced garlic and grated ginger to the skillet and stir-fry for 30 seconds until fragrant.
  5. In a small bowl, whisk together the beef broth, oyster sauce, and hoisin sauce.
  6. Pour the sauce mixture into the skillet with the vegetables. Bring to a simmer and cook for 1-2 minutes until the sauce thickens slightly.
  7. Return the seared steak to the skillet. Add the sesame oil and toss everything together to coat the steak and vegetables in the sauce. Cook for another minute until the steak is heated through.
  8. Serve immediately over cooked rice.

Notes

  • For tender beef, slice it thinly against the grain.
  • Ensure your skillet is hot before adding the steak for a good sear.
  • Adjust the amount of cornstarch in the sauce to achieve your desired thickness.
