Make this simple, creamy seafood salad using imitation crab and shrimp. It comes together fast and tastes better than store-bought versions, perfect for sandwiches or light lunches.

  • 12 oz imitation crab meat (surimi), shredded or flaked
  • 8 oz cooked shrimp, peeled and deveined, chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1/4 cup celery, finely chopped
  • 2 tablespoons red onion, finely minced
  • 1/2 teaspoon Old Bay seasoning
  • 1/4 teaspoon black pepper
  • Pinch of salt

Instructions

  1. If using whole shrimp, chop them into bite-sized pieces. Flake the imitation crab meat into small pieces.
  2. In a medium bowl, combine the mayonnaise, sweet pickle relish, Dijon mustard, and lemon juice. Whisk until smooth.
  3. Add the Old Bay seasoning, black pepper, and salt to the dressing. Mix well.
  4. Gently fold in the chopped shrimp, flaked imitation crab, celery, and red onion into the dressing.
  5. Mix until all ingredients are evenly coated. Do not overmix.
  6. Cover the bowl and chill the seafood salad for at least 30 minutes before serving to allow flavors to combine.
  7. Serve cold on lettuce, bread for sandwiches, or with crackers.

  • For a lighter salad, substitute half of the mayonnaise with plain Greek yogurt.
