Make this simple, creamy cheesy rice on the stovetop in under 30 minutes. It is a comforting side dish perfect for weeknight meals.

  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Add the garlic powder and stir for 30 seconds until fragrant.
  2. Add the uncooked rice to the saucepan and toast for 1 to 2 minutes, stirring constantly.
  3. Pour in the chicken broth and milk. Add the salt and pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during simmering.
  5. Remove the saucepan from the heat. Keep it covered and let it stand for 5 minutes.
  6. Remove the lid. Stir in the shredded cheddar cheese and grated Parmesan cheese until fully melted and the rice is creamy.
  7. Serve immediately as a side dish for chicken or steak.

Notes

  • For extra richness, substitute 1/4 cup of the milk with heavy cream.
  • You can use pre-cooked rice to speed up the process; skip steps 1 through 4 and proceed to step 5, heating the broth/milk mixture first before stirring in the cooked rice and cheese.
  • This recipe pairs well with meal planning for simple weeknight dinners.
