A simple and hearty ground beef taco soup with ranch seasoning, beans, and corn. Perfect for a quick weeknight dinner or a game day crowd.

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet (1 ounce) ranch seasoning mix
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) pinto beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies, undrained
  • 1 can (4.5 ounces) chopped green chilies, undrained
  • 4 cups beef broth
  • Optional toppings: shredded cheese, sour cream, tortilla chips, chopped cilantro

Instructions

  1. In a large pot or Dutch oven, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
  2. Stir in the ranch seasoning mix, taco seasoning mix, black beans, pinto beans, corn, diced tomatoes with green chilies, chopped green chilies, and beef broth.
  3. Bring the soup to a boil, then reduce heat and simmer for at least 20 minutes, or longer for flavors to meld.
  4. Serve hot with your favorite toppings.

Notes

  • For a slow cooker version, brown beef and onion on the stovetop, then add all ingredients to a slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  • This soup is a great pantry meal, using many common canned goods.
