Make quick, chewy red velvet dessert bars using a box of cake mix. This shortcut baking recipe is perfect for a simple holiday cookie bar or Valentines day dessert bars.

  • 1 box (15.25 ounces) red velvet cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup white chocolate chips (optional mix-in)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, combine the entire box of red velvet cake mix, vegetable oil, and eggs. Mix with a spoon or electric mixer on low speed until just combined into a thick dough. Do not overmix.
  3. If using, gently fold in the white chocolate chips.
  4. Press the dough evenly into the prepared baking pan.
  5. Bake for 20 to 25 minutes. The edges should look set, and a toothpick inserted near the center should come out with moist crumbs attached for a fudgy red velvet squares texture.
  6. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  7. Cut into squares and serve.
