1 box (15.25 oz) red velvet cake mix
2 large eggs
1/2 cup vegetable oil
1 cup mini chocolate chips (optional)
12 whole Oreo cookies, unwrapped
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, combine the entire box of red velvet cake mix, the two eggs, and the vegetable oil. Mix with a spoon or electric mixer on low speed until just combined into a thick dough. Do not overmix.
If using, stir in the mini chocolate chips.
Take one tablespoon of dough and flatten it slightly in your palm. Place one whole Oreo cookie in the center of the dough.
Wrap the dough completely around the Oreo, rolling it gently between your palms to form a smooth ball. Place the dough ball onto the prepared baking sheet, leaving about 2 inches between cookies.
Bake for 9 to 11 minutes. The edges should look set, but the centers will still look slightly soft.
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a chewier cookie, slightly underbake them. They will firm up as they cool.
If you prefer smaller cookies, use only one teaspoon of dough per cookie and use half an Oreo for the center.
You can substitute the vegetable oil with melted butter for a richer flavor, but the texture may be slightly different.
