  • 1 box (15.25 ounces) red velvet cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
  2. In a medium bowl, combine the entire box of red velvet cake mix, vegetable oil, and eggs. Mix with a spoon or electric mixer until just combined. Do not overmix.
  3. Gently fold in the white chocolate chips.
  4. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  5. Bake for 9 to 11 minutes. The edges should look set, but the centers will still look slightly soft.
  6. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For thicker cookies that spread less, chill the dough for 30 minutes before scooping.
  • You can substitute the oil with melted butter for a richer flavor, but the texture may be slightly different.
