Quick and easy breakfast roll-ups perfect for busy mornings. These can be made ahead, frozen, and reheated for a delicious grab-and-go meal.

  • 1 pound breakfast sausage
  • 12 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cans (8 ounces each) refrigerated crescent rolls
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook sausage in a skillet over medium heat until browned. Drain excess grease.
  2. In a bowl, whisk together eggs, milk, salt, and pepper.
  3. Pour egg mixture into the skillet with the sausage. Cook, stirring, until eggs are set.
  4. Unroll crescent dough and separate into triangles.
  5. Spoon a portion of the sausage and egg mixture onto the wide end of each triangle.
  6. Sprinkle with cheddar cheese.
  7. Roll up dough from the wide end to the point.
  8. Place roll-ups on a baking sheet lined with parchment paper.
  9. Bake at 375°F (190°C) for 15-18 minutes, or until golden brown.
  10. Let cool slightly before serving.

Notes

  • For freezing, wrap individual roll-ups tightly in plastic wrap, then place in a freezer bag. Reheat in the oven or microwave.
