8 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound breakfast sausage, cooked and crumbled
1 cup shredded cheddar cheese
8 large flour tortillas

Instructions
In a bowl, whisk together eggs, milk, salt, and pepper.
Cook sausage in a skillet over medium heat until browned. Drain excess grease.
Lightly grease a non-stick skillet with cooking spray and heat over medium-low heat.
Pour about 1/4 cup of the egg mixture into the skillet to form a thin omelet. Cook for 1-2 minutes per side, until set. Repeat with remaining egg mixture to make 8 thin omelets.
Lay a tortilla flat. Place one thin omelet on top of the tortilla.
Sprinkle about 2 tablespoons of cooked sausage and 2 tablespoons of shredded cheese over the omelet.
Roll up the tortilla tightly.
Repeat with remaining tortillas, omelets, sausage, and cheese.
For immediate serving, you can warm them in a skillet or air fryer. For make-ahead, wrap each roll-up tightly in plastic wrap and store in the refrigerator or freezer.
Notes
To reheat from the refrigerator, microwave for 30-60 seconds or heat in an air fryer at 350°F (175°C) for 5-7 minutes.
To reheat from frozen, microwave for 1-2 minutes, or until heated through. You can also reheat in an air fryer at 350°F (175°C) for 10-12 minutes, or in a conventional oven at 350°F (175°C) for 15-20 minutes.
