Sausage Egg and Cheese Roll-Ups

Easy, make-ahead breakfast roll-ups filled with sausage, eggs, and cheese, perfect for busy mornings.

Ingredients

  • 8 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 8 large flour tortillas
  • Cooking spray

Instructions

  1. In a bowl, whisk together eggs, milk, salt, and pepper.
  2. Cook sausage in a skillet over medium heat until browned. Drain excess grease.
  3. Lightly grease a non-stick skillet with cooking spray and heat over medium-low heat.
  4. Pour about 1/4 cup of the egg mixture into the skillet to form a thin omelet. Cook for 1-2 minutes per side, until set. Repeat with remaining egg mixture to make 8 thin omelets.
  5. Lay a tortilla flat. Place one thin omelet on top of the tortilla.
  6. Sprinkle about 2 tablespoons of cooked sausage and 2 tablespoons of shredded cheese over the omelet.
  7. Roll up the tortilla tightly.
  8. Repeat with remaining tortillas, omelets, sausage, and cheese.
  9. For immediate serving, you can warm them in a skillet or air fryer. For make-ahead, wrap each roll-up tightly in plastic wrap and store in the refrigerator or freezer.

Notes

  • To reheat from the refrigerator, microwave for 30-60 seconds or heat in an air fryer at 350°F (175°C) for 5-7 minutes.
  • To reheat from frozen, microwave for 1-2 minutes, or until heated through. You can also reheat in an air fryer at 350°F (175°C) for 10-12 minutes, or in a conventional oven at 350°F (175°C) for 15-20 minutes.
  • These are great for meal planning and can be part of your weekly meal prep.
