  • 1 pound Italian sausage, casings removed
  • 1 pound rigatoni or penne pasta
  • 1 small yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 3 to 4 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  3. Pour in the chicken broth and add the diced tomatoes (with their juice) and the dry pasta to the skillet. Stir everything together.
  4. Bring the mixture to a boil, then reduce the heat to medium-low, cover the skillet, and simmer for 12 to 15 minutes, stirring occasionally to prevent the pasta from sticking to the bottom. The pasta should be nearly tender.
  5. Stir in the heavy cream and continue to cook, uncovered, for 2 to 3 minutes until the sauce thickens slightly.
  6. Remove the skillet from the heat. Stir in the fresh spinach until it wilts.
  7. Stir in the grated Parmesan cheese until the sauce is creamy and smooth. Season with salt and pepper to your preference.
  8. Serve this easy sausage pasta immediately.
