  • Juice of 2 limes (about 1/4 cup)
  • 1/4 cup chopped fresh cilantro
  • 12 small corn or flour tortillas
  • For the Slaw: 2 cups shredded green cabbage, 1/2 cup shredded carrot, 1 tablespoon lime juice
  • For the Avocado Crema: 1 ripe avocado, 1/2 cup plain Greek yogurt, 1 tablespoon lime juice, pinch of salt

Instructions

  1. Prepare the shrimp seasoning: In a bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Set aside.
  2. Make the avocado crema: Combine the avocado, Greek yogurt, 1 tablespoon lime juice, and a pinch of salt in a food processor or blender. Blend until completely smooth. If the mixture is too thick, add a teaspoon of water until it reaches a drizzling consistency.
  3. Prepare the slaw: In a separate bowl, mix the shredded cabbage, shredded carrot, and 1 tablespoon of lime juice. Toss to combine.
  4. Cook the shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer. Cook for 2-3 minutes per side until pink and cooked through. Remove from heat and immediately toss the cooked shrimp with the 1/4 cup of fresh cilantro and the juice of 2 limes.
  5. Warm the tortillas: Warm the tortillas according to package directions (usually a quick toast in a dry skillet or microwave).
  6. Assemble the tacos: Layer each warm tortilla with the lime shrimp, top with the crunchy slaw, and drizzle generously with the avocado crema.
